Southern Maryland Stuffed Ham Recipe

Ingredients

  • 1 deboned corned ham (12-15 lb)

  • 3-4 lb kale, finely chopped

  • 1-2 heads green cabbage, finely chopped

  • 4 large onions, finely chopped

  • 12 cloves garlic, minced

  • Black pepper, red pepper flakes, cayenne pepper (to taste)

  • 4 oz whole grain mustard

  • Optional: celery seed or mustard seed

Instructions

  1. Mix kale, cabbage, onion, garlic, and spices until well combined. Simmer until reduced. Let cool, mix in mustard.

  2. Cut deep pockets throughout the ham and firmly pack the vegetable mixture inside.

  3. Place the ham in a roasting pan or pot and add water to come about halfway up the ham.

  4. Cover and cook low and slow (300°F oven or gentle simmer) for approximately 20 minutes per lb of ham.

  5. Rest, slice, and serve cold.

Notes
Traditionally served at holidays and family gatherings in Southern Maryland. The stuffing should be bold, peppery, and tightly packed — no shortcuts.
